Today will be a busy day of cooking but I am always looking ahead! So I wanted to take a few minutes and take some time to break down one of my favorite items on the menu and offer a little bit of culinary insight.
I'm willing to be you have rarely, if ever, heard of Porchetta. “Porchetta [porˈketta] is a savory, fatty, and moist boneless pork roast”. The roast is “stuffed with liver, wild fennel, all fat and skin still on, spitted and/or roasted, traditionally over wood for 8+ hours". Porchetta is usually heavily salted in addition to being stuffed with garlic, rosemary, fennel, or other herbs, often wild.” (Wikipedia)
Our Porchetta is prepared much in the same way as the Italian tradition. We start with a fresh boneless pork loin, fillet it and then stuff it with a fresh herb and butter mixture. The meat is then rolled, tied and roasted, until it is cooked to perfection. The Porchetta is then chilled and sliced, ready for delivery to your dinner table!
Meal #4 next week is Porchetta, served with green beans and mushrooms.
